Bean Soup


1-1/2 lbs smoked ham hocks

1 lb package small white beans

3 sliced carrots

3 stalks celery, sliced

2 Medium yellow onions, chopped

2 bay leaves

salt and pepper to taste

water to cover


Put all ingredients in a soup pot. Bring to boil. Reduce heat and simmer for 3-4 hours.

It will get very thick, add water as desired. At some point, remove ham hocks and allow to cool to the touch. Cut meat off bone, remove/discard fat and return the bones and meat to the pot. Once ready to serve, remove both bay leaves and all bones. 

Bring out some crusty bread and butter, Enjoy!!
